Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the batter

  1. Beat the eggs in a large bowl.

  2. Sift in the flour and add the milk to the egg yolks, mixing well.

  3. In a separate bowl, beat the egg whites with a little salt until stiff peaks form.

  4. Gently fold the egg whites into the egg mixture.

Bake and serve

  1. Pour the mixture into a greased baking dish and bake immediately at 350°F (175°C) until set.

  2. Serve with a liquid sauce.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Provide structure when set, and whipped whites add lift and a light texture.
Flour
Gives body to the batter and helps it hold its shape as it sets.
Milk
Supplies moisture and liquid that the eggs and flour set into a tender custard-like crumb.

The step that matters

Folding in the egg whites. Whipped whites hold air that gives the pudding lift. Stirring them in vigorously deflates the foam, so fold gently with a spatula until just combined.
