What each ingredient does

Ripe tomatoes
Provide the bulk and juicy moisture that forms the body of the relish.
Green tomatoes
Add firm texture and tartness that holds up through long simmering.
Cabbage
Adds crunch and bulk, giving the relish its chunky texture.
Sugar
Adds sweetness that balances the vinegar and preserves the mixture.
Vinegar
Provides acidity that preserves the chow chow and sharpens its flavor.
Horseradish
Contributes sharp, pungent heat that mellows during the month of standing.

The step that matters

Drain the brine thoroughly. Salting draws out a large amount of water from the vegetables. If excess brine stays in the mixture, the relish can be overly salty and may spoil sooner, so draining well matters.
