Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Isinglass or gelatine
Sets the chilled mixture so it holds its shape when turned out.
Egg yolks
Thicken and enrich the chocolate cream as they gently cook.
Egg whites
Whipped into the mixture to add lightness and a airy texture.
Sweet cream
Adds richness and moisture, giving a smooth, creamy body.
Baker's prepared cocoa
Provides the chocolate flavour and dark colour.

The step that matters

Simmer without boiling. Boiling egg-thickened custard can curdle it and make it grainy, so it should only be kept just below a boil while the eggs set the mixture.

Swap the cocoa

How well each one fits the dish's main ingredients (cream, egg, sugar):

  1. Almondfits better
  2. Pistachiofits better
  3. Chestnutfits better
  4. Cocoathe original

Fit is the average pairing score against cream, egg, sugar. Candidates are from the same food group and used in at least 100 recipes.
