Chicken Cream Soup

Ingredients

Directions

Simmer the broth

  1. Place the chicken, corned ham, and onion in a soup kettle with cold water.

  2. Bring to a gentle boil and simmer until the liquid reduces by one-third and the meat falls off the bones.

Add the rice and milk

  1. Add the rice and season with salt, pepper, and chopped parsley.

  2. Cook slowly until the rice is tender, then remove the chicken.

  3. Stir in the milk thickened with a little flour.

Finish

  1. Optionally, fry the chicken in butter and make gravy.

  2. Reserve some white meat, chop it, and add it to the soup.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chicken
Gives the soup its meaty body and flavor as it simmers into the broth.
Corned ham
Adds salty, savory depth to the broth as it cooks.
Onion
Builds a sweet, savory aroma as it softens in the simmering liquid.
Rice
Releases starch as it cooks, adding body and thickening the soup.
Milk
Adds richness and creaminess, softening the flavor of the broth.
Flour
Starch that thickens the milk so it lightly coats the soup.

The step that matters

Thickening the milk with flour. Flour clumps when stirred into hot liquid unless it is first smoothed into the milk. Starch thickens only when heated, so a smooth mix thickens the soup evenly without lumps.

Swap the parsley

How well each one fits the dish's main ingredients (chicken, ham, onion, rice, pepper, milk, flour):

  1. Turmericfits better
