What each ingredient does

Calf's head
Provides the meat and gelatin that give the soup its body and rich texture.
Flour
Thickens the broth so it becomes smooth and body-rich.
Madeira or sherry
Adds acidity and fortified wine aroma that brightens the rich broth.
Lean ham
Contributes savory, salty meaty flavor to the stock.
Onion
Builds aromatic savory depth as it softens in the butter.
Lemon juice
Adds acidity that sharpens and balances the rich, heavy flavors.

The step that matters

Dredge in a small quantity of flour. Flour added to hot fat and liquid can clump if not evenly dispersed; it must be stirred in well so it thickens smoothly rather than forming lumps.

Swap the onion

  1. Shallotfits better
  2. Carrotfits better
