Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Clams
Provide the main flavor and texture of the soup.
Milk
Forms the creamy body of the soup.
Flour
Thickens the soup as it simmers with the milk.
Butter
Adds richness and a silky mouthfeel to the soup.
Crackers
Help thicken the soup and add a subtle toasted flavor.

The step that matters

Stirring in the flour mixture. Flour must be mixed smoothly with cold milk before it goes in, because dry flour added directly clumps and does not thicken evenly. Stirring while it heats lets starch swell and thicken the soup evenly.

Swap the mace

The recipe marks mace as optional. How well each one fits the dish's main ingredients (clam, pepper, egg, butter, milk, flour, lemon):

  1. Parsleyfits better
  2. Nutmegfits better
  3. Marjoramfits better
  4. Macethe original

Fit is the average pairing score against clam, pepper, egg, butter, milk, flour, lemon. Candidates are from the same food group and used in at least 100 recipes.
