What each ingredient does

Fish
Forms the bulk of the pie and provides the main flavour and body.
Oysters
Add a briny, savoury flavour that seasons the fish layers.
Bread crumbs
Absorb moisture and give the layers body, with browned crumbs adding a crisp top.
Butter
Adds richness and helps the top brown and crisp in the oven.

The step that matters

Layering and topping before baking. Filling the dish fully and covering it well keeps the fish moist as it heats through. A full dish with an even topping also helps the crumbs or pastry brown evenly instead of drying out.
