Why it works: Pepper and parsley match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 34,122 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Baked White Fish

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the fish

  1. Cut off the fish head if preferred and remove the backbone, leaving 2 inches from the tail.

  2. In a skillet, melt 1 ounce of butter and fry the chopped onion until soft.

  3. Add the soaked bread, remaining butter, salt, pepper, and parsley or sage; heat through.

  4. Remove from heat and stir in the beaten egg yolks.

  5. Stuff the fish with the mixture, sew it up with twine, and wrap it with white tape.

Bake and serve

  1. Rub the fish with butter and place it in a baking pan with hot water covering the bottom.

  2. Shape the fish into an S and bake at 350°F (175°C) until cooked through.

  3. For the dressing, mash the hard-boiled egg yolks into a smooth paste with salad oil. Stir in the mustard and add pepper and vinegar to taste.

What each ingredient does

White fish
Forms the main body of the dish and cooks through in the oven to become flaky and moist.
Egg yolks
Bind the stuffing together and enrich it, helping it hold its shape when heated.
Butter
Adds richness and moisture, helping the fish stay tender as it bakes.
Stale bread
Soaks up liquid and adds body to the stuffing, giving it a soft, cohesive texture.
Hard-boiled egg yolks
Mash into a smooth base for the dressing, adding richness and body.
English mustard
Adds sharp heat that balances the richness of the egg and oil dressing.

The step that matters

Baking the stuffed fish in hot water. Baking in a pan of hot water gently surrounds the fish with moderate heat, so it cooks through without drying the outside. Overcooking will still dry it out, so check that it is opaque and flakes easily.
