Why it works: Wheat and milk are a kitchen classic. They rank in the top 6% of all ingredient pairs, and cooks put them together in 2,418 recipes. Both carry (e,z)-2,6-nonadienal, which smells cucumber, melon. The science ↓
Clam Fritters
Ingredients
Directions
Prepare
Remove clams from their shells. If using large clams, cut each in half.
Lay clams on a thickly folded napkin.
Make the batter
In a bowl, combine wheat flour, beaten eggs, sweet milk, and clam liquor. Beat until smooth and lump-free.
Stir in the clams.
Fry
Heat lard or beef fat in a thick-bottomed frying pan until boiling hot.
Drop spoonfuls of the batter into the hot fat and fry gently.
When one side is a delicate brown, turn to cook the other side.

The flavor team
The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Wheat flour
- Provides the body and structure that holds the batter together around the clams.
- Eggs
- Bind the batter and help it set firmly while frying.
- Sweet milk
- Adds moisture and softness to the batter and helps it brown.
- Clam liquor
- Adds moisture and concentrated clam flavour to the batter.
- Sand clams
- Provide the main flavour and texture of the fritters.
The step that matters
Heating the fat until boiling hot before frying. Very hot fat sets the outside of each spoonful quickly, so the fritter holds its shape and absorbs less grease. If the fat is too cool, the batter soaks it up, turns heavy and greasy, and browns unevenly.
