Woodcock, Roasted

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the bird

  1. Skin the head and neck of the woodcock and pluck the feathers.

  2. Truss the bird by bringing its beak under the wing and fastening the pinion to the thigh.

  3. Twist the legs at the knuckles and press the feet against the thigh.

  4. Place a slice of bread under the bird to catch drippings.

  5. Baste the bird with butter and dredge it with flour.

Roast and serve

  1. Roast in a hot oven at 400°F (200°C) for 15 to 20 minutes.

  2. Cut the bread into diamond shapes, large enough to hold the bird.

  3. Arrange the bread on your dish and serve with gravy to moisten it.

  4. Garnish with lemon slices.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Woodcock
Is the main protein; cooked quickly in a hot oven so the meat stays tender.
Butter
Adds richness and helps the skin brown and crisp while the bird roasts.
Flour
Dusted over the basted bird, it helps form a browned, crisp coating.
Bread
Soaks up drippings beneath the bird, then serves as a moist base for it.
Gravy
Moistens the bread and bird on serving, adding savoury liquid and flavour.

The step that matters

Roast in a hot oven for 15 to 20 minutes. Woodcock is a small, lean bird that dries out quickly. A short, high-heat roast cooks it through while keeping the meat juicy, so overcooking is the main risk.

Swap the lemon

How well each one fits the dish's main ingredients (butter, flour, bread):
