What each ingredient does

Lamb
Provides the main meat, which becomes tender through long, gentle stewing.
Potatoes
Absorb liquid and soften as they cook, adding body to the stew.
Flour
Thickens the cooking liquid into a gravy when moistened with milk first.
Salt pork
Adds fat and savory flavor that enriches the broth.
Onions
Soften during stewing and add sweetness and aroma to the broth.

The step that matters

Thickening the gravy with flour. Flour added directly to hot liquid forms lumps. Mixing it with milk first disperses the starch so it thickens the gravy smoothly.
