Why it works: Sage and pepper match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 5,388 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

Roast Leg of Pork

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. Make a small cut in the knuckle of the pork leg and fill it with sage, onion, pepper, and salt.

Roast and score

  1. Roast the pork until half done, then score the skin in a crisscross pattern without cutting deeper than the outer rind.

  2. Remove excess fat from the roasting pan.

Make the gravy and serve

  1. Stir flour with a little water and add it to the pan, then add more water to achieve the desired consistency.

  2. Serve the gravy in a gravy boat alongside the pork.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Pork leg
Provides the main meat, which becomes tender and juicy during slow roasting.
Flour
Thickens the pan juices into a smooth gravy as it heats.
Sage
Adds a savory, aromatic herb flavor that penetrates the meat from the stuffed knuckle cut.
Onion
Adds aromatic sweetness and moisture as it cooks inside the pork.

The step that matters

Scoring the skin without cutting into the meat. Cutting deeper than the outer rind exposes the lean meat, which can dry out during roasting. A shallow score lets fat render and helps the skin crisp.

Swap the onion

How well each one fits the dish's main ingredients (pork, sage, pepper, flour):

  1. Capsicumfits better
  2. Turnipfits better
  3. Spinachfits better
  4. Onionthe original

Fit is the average pairing score against pork, sage, pepper, flour. Candidates are from the same food group and used in at least 100 recipes.
