Crab Salad

Ingredients

Directions

Prepare the crab

  1. Boil the crabs for 25 minutes, then drain and let cool.

  2. Remove the upper shell and tail, then break apart and pick out the meat carefully. Don't forget the large claws and the creamy fat from the upper shell.

Assemble and serve

  1. Line a salad bowl with small white leaves of lettuce.

  2. Add the crab meat to the bowl.

  3. Pour mayonnaise over the crab meat and garnish with crab claws, hard-boiled eggs, and small mounds of cress leaves.

  4. Mix the cress leaves with the salad when serving.

What each ingredient does

Hard-shell crabs
Provide the main body of sweet, tender meat for the salad.
Mayonnaise
Adds fat and moisture, binding the crab meat into a creamy texture.
Lettuce
Forms a crisp base that holds the salad and adds freshness.
Hard-boiled eggs
Add richness and a soft, firm texture as a garnish.

The step that matters

Pick out the meat carefully. Stray shell fragments are hard to see in crab meat and can be unpleasant or hazardous to bite into. Careful picking also keeps the large pieces intact for a better texture.

Swap the lettuce

How well each one fits the dish's main ingredients (crab, egg):

  1. Asparagusfits better
  2. Chivefits better
  3. Capsicumfits better
  4. Lettucethe original

Fit is the average pairing score against crab, egg. Candidates are from the same food group and used in at least 100 recipes.
