What each ingredient does

Tart apples
Provide the bulk and pectin that give the ketchup its body and natural tartness.
Sugar
Adds sweetness and, with long boiling, helps thicken and preserve the mixture.
Vinegar
Adds acidity that balances sweetness and helps preserve the ketchup.
Onions
Add savory flavor and body as they soften during the long boil.

The step that matters

Boil for one hour. Long simmering evaporates water and concentrates the sugars and acids, thickening the ketchup and helping it keep. Too short a boil leaves it thin and less stable.

Swap the onion

How well each one fits the dish's main ingredients (apple, sugar, pepper, clove, mustard, cinnamon, vinegar):

  1. Horseradishfits better
  2. Capsicumfits better
  3. Radishfits better
  4. Onionthe original

Fit is the average pairing score against apple, sugar, pepper, clove, mustard, cinnamon, vinegar. Candidates are from the same food group and used in at least 100 recipes.
