Cheap Cream Cake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the cake

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, mix 1 cup sugar, 1 egg, 1 cup sweet milk, 2 cups flour, 1 tablespoon butter, and 2 heaping teaspoons baking powder.

  3. Divide the batter into three parts and pour into round shallow pans.

  4. Bake until golden brown.

Make the cream

  1. For the cream, beat 1 egg and ½ cup sugar together.

  2. Add ¼ cup flour and a little milk to the egg mixture.

  3. Stir this into ½ pint of boiling milk until thick.

  4. Flavor to taste and let cool.

Assemble

  1. Spread the cream between the baked cake layers.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Provides the structure that holds the cake's crumb together as it bakes.
Baking powder
Releases gas during baking so the cake rises and becomes light.
Egg
Adds structure and richness, helping the batter and cream set.
Sugar
Sweetens the cake and helps the crust brown during baking.
Butter
Adds fat for tenderness and a richer flavor in the cake.
Milk
Supplies moisture and, when heated with flour and egg, thickens the cream.

The step that matters

Stirring the flour and egg mixture into boiling milk until thick. Adding the egg and flour mixture too quickly or without stirring can lump or curdle the cream. Constant stirring lets the starch in the flour swell evenly and the egg set smoothly, giving a uniform, thick filling.
