Soyer's Recipe for Puff-paste

Ingredients

Directions

  1. On a clean surface, place the flour and make a hole in the center.

  2. Add the egg yolk, lemon juice, and salt into the hole.

  3. Mix with cold water to form a soft, flexible paste, handling it as little as possible.

  4. Remove buttermilk from the butter and wring it in a cloth.

  5. Roll out the paste, place the butter in the center, and fold the edges over to cover it.

  6. Roll out to a thickness of ¼ inch, then fold one third over and roll again.

  7. Fold the other third over, forming a square, and repeat the rolling and folding process twice more.

  8. Flour a baking sheet, place the paste on it, and chill for 30 minutes.

  9. Roll out twice more, turning as before, and chill for another 15 minutes.

  10. Give it two more rolls, making a total of seven, and it is ready to use.
