Rhubarb Pie

Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the filling

  1. Cut the large stalks of rhubarb where the leaves begin and strip off the skin.

  2. Line a pie dish with rolled pie crust, thicker than a dollar piece.

  3. Place a layer of rhubarb in the dish, nearly an inch deep.

  4. In a bowl, mix the rhubarb with sugar, salt, nutmeg, and flour.

  5. Strew the mixture over the rhubarb in the pie dish.

Assemble and bake

  1. Cover with a rich pie crust.

  2. Cut a slit in the center.

  3. Trim the edges.

  4. Bake in a 400°F (200°C) oven until the pie loosens from the dish.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rhubarb
Provides the tart flavor and the juicy body of the filling.
Sugar
Adds sweetness and balances the rhubarb's sharp tartness.
Flour
Thickens the rhubarb juices as the filling heats, so the slice holds together.
Pie crust
Encloses the filling and gives the pie its structure and browned, flaky exterior.

The step that matters

Bake until the pie loosens from the dish. Rhubarb releases a lot of liquid, and the flour needs enough heat to thicken that juice. Underbaking leaves a runny filling, while the crust needs to set and brown to hold its shape.

Swap the nutmeg

How well each one fits the dish's main ingredients (rhubarb, sugar, flour):

  1. Cinnamonfits better
  2. Jalapenofits about as well
  3. Nutmegthe original
  4. Capersfits about as well

Fit is the average pairing score against rhubarb, sugar, flour. Candidates are from the same food group and used in at least 100 recipes.
