What each ingredient does

Pineapple
Provides the main fruit flavour and the body of the filling.
Sugar
Sweetens the filling and softens its taste against the fruit's acidity.
Isinglass or gelatine
Sets the filling so it holds its shape when turned out.
Cream
Adds richness and a light, airy texture when whipped and folded in.

The step that matters

Folding in the cream. The mixture must be cool and just beginning to thicken. If it is still too liquid, the whipped cream deflates and the filling stays loose; if it has set firmly, the cream forms lumps instead of blending smoothly.

Swap the pineapple

How well each one fits the dish's main ingredients (sugar, cream):

  1. Vanillafits better
  2. Strawberryfits better
  3. Raspberryfits better
