What each ingredient does

Fruit juice
Provides the main flavour and liquid base of the ice cream.
Cream
Whipped to trap air, giving the frozen ice cream a light, smooth texture.
Sugar
Sweetens the fruit and softens the frozen texture by lowering the freezing point.

The step that matters

Whipping the cream before combining. Cream whipped to soft peaks traps air that gives a light texture. Overwhipping can turn it grainy or buttery, and it may then separate when folded into the fruit.
