Corn-meal Puffs

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Make the batter

  1. In a pot, stir 8 tablespoons of Indian meal, 4 tablespoons of powdered sugar, and 1 teaspoon of nutmeg into 1 quart of boiling milk.

  2. Boil for 5 minutes, stirring constantly to prevent sticking.

  3. Remove from heat and let cool.

  4. Once cool, stir in 6 beaten eggs until well mixed.

Bake and serve

  1. Pour the mixture into buttered teacups, filling them nearly full.

  2. Bake in a 350°F (175°C) oven for 30 minutes.

  3. Serve with lemon sauce.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Indian meal
Cornmeal thickens the boiled milk into a firm, starchy base that holds the puffs together.
Eggs
Eggs set during baking to add structure and lift, helping the puffs rise and hold their shape.
Milk
Milk provides the liquid that the cornmeal swells in and adds richness and tenderness.
Powdered sugar
Sugar adds sweetness and helps the puffs brown lightly in the oven.

The step that matters

Stirring while boiling. Cornmeal settles and scorches on the bottom of the pot if not stirred constantly, and lumps form if it is added to milk without thorough mixing. Constant stirring keeps the starch evenly dispersed and gives a smooth base for the eggs.

Swap the nutmeg

How well each one fits the dish's main ingredients (milk, sugar, egg, butter):

  1. Cinnamonfits better
  2. Nutmegthe original
  3. Gingerfits less well
  4. Parsleyfits less well

Fit is the average pairing score against milk, sugar, egg, butter. Candidates are from the same food group and used in at least 100 recipes.
