Variegated Creams

Ingredients

Directions

  1. Prepare the French Cream and divide it into three parts: one white, one pink with cochineal syrup, and one brown with chocolate.

  2. To color the pink cream, add a few drops of cochineal syrup while warm and beat it in.

  3. For the brown cream, stir in finely grated chocolate until well combined.

  4. Shape the white cream into a flat ball and press it into a buttered dish until about ½ inch thick.

  5. If the cream is difficult to work with, dip your hands in alcohol.

  6. Repeat the process with the pink cream, layering it on top of the white cream.

  7. Layer the brown cream on top of the pink cream, pressing all layers together.

  8. Trim the edges to create a smooth square cake, then cut into slices or small cubes.
