Directions

Brew

  1. In a bowl, stir together the ground coffee, egg, and eggshell with cold water.

  2. Transfer the mixture to a coffee boiler and add boiling water.

  3. As it rises and begins to boil, stir it down with a silver spoon or fork.

  4. Boil hard for 10 to 12 minutes.

  5. Remove from heat and pour out a cup of coffee, then pour it back into the coffee pot.

  6. Place the pot on the back of the stove to keep hot without boiling for about 5 minutes.

Serve

  1. Serve hot with cream and lump sugar.

What each ingredient does

Ground coffee
Provides the coffee flavor and aroma that the brew extracts into the water.
Egg
Its white and shell help bind fine grounds and clarify the liquid as it brews.

The step that matters

Stirring the grounds as the coffee rises. Stirring the coffee down when it rises and begins to boil keeps the grounds from boiling over and helps them settle, which affects the clarity and strength of the final cup.
