Leaf Lard

Ingredients

Directions

  1. Render the leaf or flake fat and choice pieces of fat meat separately.

  2. Store the rendered leaf lard in jars or cans in a cool place.

  3. Cook the entrail fat and bits of fat meat last, and store them separately for use in cooler weather.

  4. Use a slow fire to avoid burning the fat and ensure all water is removed.

  5. Have close-fitting covers ready to extinguish any fire by excluding air.
