What each ingredient does

Lean pork
Provides the main meat and savory flavor once browned and simmered until tender.
Onions
Browning them builds sweetness and savory depth into the base of the gumbo.
Bell peppers
Add fresh, slightly sweet vegetable flavor that mellows during long simmering.
Peeled tomatoes
Supply liquid and acidity that help form the stewing broth.
Okra
Releases natural thickening starch during simmering, giving the gumbo body.

The step that matters

Adding the okra. Okra thickens the gumbo as it cooks, but cooking it too long can make it slimy and dull. Adding it near the end and covering the pot lets it soften and thicken the broth evenly.
