Ingredients

Directions

Make the broth

  1. Wash the pork and bacon, then boil them in 2 quarts of water with the pepper pod, sage, and celery.

  3. Add the peeled tomatoes, chopped onion, and salt if needed; boil for 30 minutes.

Cook the rice and serve

What each ingredient does

Rice
Absorbs the seasoned liquid as it steams, becoming tender and forming the body of the pilaf.
Pork
Simmers slowly in the liquid, becoming tender and flavouring the broth.
Bacon
Adds smoky fat to the broth, contributing savoury richness.
Tomatoes
Add acidity and body to the broth, balancing the rich pork and bacon.
