Stuffed Shoulder of Pork

Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the pork

  1. Bone the shoulder of pork by cutting out the shoulder blade and leg bone, turning the flesh over the bone as you cut, like a glove-finger on the hand.

  2. Sew up any accidental cuts to prevent stuffing from escaping.

Make the stuffing

  1. Peel and core the apples.

  2. Chop the apples finely with the onions, sage, and lemon thyme.

  3. Boil the white potatoes.

  4. Mash the boiled potatoes.

  5. Mix the mashed potatoes with the chopped ingredients, salt, and cayenne.

Stuff and roast

  1. Stuff the shoulder with the mixture.

  2. Sew up all openings of the stuffed shoulder.

  3. Dredge the stuffed shoulder with flour, salt, and pepper.

  4. Roast in a hot oven at 400°F (200°C) for 20 minutes per pound, basting frequently with hot water and then with pan gravy.

Serve

  1. Serve with currant jelly, potatoes, and green vegetables.

What each ingredient does

Pork shoulder
Provides the main meat, which becomes tender and juicy during long roasting.
Apples
Add moisture and a gentle sweetness that balances the rich pork.
White potatoes
Bind the stuffing and add moisture and body to the filling.
Onions
Add savory depth and aroma to the stuffing as they soften.
Flour
Dusted on the outside, it helps the surface brown during roasting.

The step that matters

Roast and baste the stuffed shoulder. A stuffed joint is dense, so it roasts slowly and can dry out. Frequent basting keeps the surface moist and helps it brown evenly, while the stuffing must heat fully through.

Swap the apple

How well each one fits the dish's main ingredients (pork, onion, sage, lemon, thyme, potato, pepper):

  1. Limefits better
  2. Avocadofits better
  3. Orangefits better
  4. Applethe original

Fit is the average pairing score against pork, onion, sage, lemon, thyme, potato, pepper. Candidates are from the same food group and used in at least 100 recipes.
