What each ingredient does

Kidney
Forms the main meat body of the dish, becoming tender through long simmering.
Onion
Adds savory sweetness and aroma as it softens in the butter.
Butter
Carries the frying flavor and adds richness to the kidney and onion.
Cornstarch
Thickens the cooking liquid into a smooth, glossy sauce when heated.

The step that matters

Thickening with cornstarch. Cornstarch must be mixed with cold water before adding, otherwise it clumps. It thickens only when the liquid is hot enough to swell its starch granules, so the sauce needs to come to a simmer after adding it.

Swap the onion

How well each one fits the dish's main ingredients (butter, bread, pepper):

  1. Capsicumfits better
  2. Tomatofits better
  3. Potatofits about as well
  4. Onionthe original

Fit is the average pairing score against butter, bread, pepper. Candidates are from the same food group and used in at least 100 recipes.
