Pork Pudding

Ingredients

Directions

  1. Cut the fresh pork into pieces and stew in a skillet with slightly salted water until soft.

  2. Prepare a rich biscuit dough or plain pie paste.

  3. Line a quart basin with the paste and fill it with the stewed pork.

  4. Add pepper and chopped potatoes if desired.

  5. Cover the filling with the paste, pinching it tightly over the top.

  6. Tie a small cloth tightly over the basin, then place the basin in a larger cloth, gathering the corners and tying snugly over the top.

  7. Boil in a kettle for half an hour, ensuring the water is boiling hot before placing the basin in and keeping it boiling with a tight lid.
