Good Sausage

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat the oven to 350°F (175°C).

  2. Place the sage in a pan and dry it in the oven, then sift it.

  3. In a large bowl, combine the pork, salt, pepper, dried sage, ground mustard (if using), and sugar.

  4. Mix all ingredients thoroughly with the meat before chopping.

  5. Once well mixed, shape the sausage to your liking.
