Escaloped Oysters

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Crush the soda crackers or bread crumbs finely.

  2. Layer half of the crumbs in a deep buttered dish.

  3. Wet the crumbs slightly with the oyster liquor.

Assemble

  1. Add a layer of oysters on top of the crumbs.

  2. Sprinkle with coarse sea salt and black pepper, then add small pieces of butter.

  3. Repeat the layers until all oysters are used, finishing with a layer of crumbs on top.

  4. Dot the top with butter and pour the milk over everything.

  5. If using, beat the eggs and mix them with the milk before pouring.

Bake

  1. Bake at 350°F (175°C) until light brown.

What each ingredient does

Oysters
Provide the main flavor and tender texture of the dish.
Soda crackers or bread crumbs
Form the layers that soak up liquid and give the dish its body.
Oyster liquor
Moistens the crumbs and adds briny seasoning throughout.
Milk
Adds moisture that softens the crumbs as the dish bakes.
Eggs
Help the milk mixture set into a custard-like texture.
Butter
Adds richness and promotes browning on the top layer.

The step that matters

Bake until light brown. Baking long enough lets the milk and eggs set and the crumbs brown, while overbaking can dry the oysters and toughen the custard.
