Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Browned in fat to form a roux that thickens the sauce.
Anchovies
Provide a salty, savoury depth that flavours the sauce.
Egg yolks
Thicken the sauce and give it a richer texture.
White wine
Adds acidity and a light aromatic flavour to the sauce.
Capers
Add a sharp, briny bite that contrasts with the richness.

The step that matters

Thicken the sauce with egg yolks. Egg yolks set when heated, so the sauce must be kept below a boil once they are added. Boiling after adding yolks can curdle or scramble them, leaving a grainy texture.

Swap the onion

How well each one fits the dish's main ingredients (flour, vinegar, sugar, capers, white wine, egg):

  1. Shallotfits better
  2. Mustardfits better
  3. Arrowrootfits better
