Roast Turkey

Ingredients

Directions

  1. Select a young, fat turkey; the breastbone should yield to touch.

  2. Singe, wash, and clean the turkey thoroughly, then soak it in salt water for 15 minutes.

  3. Soak the stale bread in water, then heat goose fat in a pan.

  4. Add the chopped onion to the hot fat and fry until soft.

  5. Squeeze out the water from the bread and add it to the pan to dry.

  6. Remove from heat, place the bread in a bowl, and season with salt, pepper, ginger, and nutmeg.

  7. Add the tomatoes and eggs, mixing until combined.

  8. Rub the turkey inside and out with salt, pepper, and a little ground ginger.

  9. Stuff the turkey with the dressing, sew it up, and refrigerate overnight.
