Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cucumbers
Provide the main crisp, watery body of the salad once sliced and drained.
Onion
Adds sharp aroma and flavor that mellows during salting and resting.
Coarse sea salt
Draws water out of the cucumbers and onion, seasoning them and firming their texture.
Vinegar
Adds acidity that brightens the salad and balances the salt.

The step that matters

Squeezing out the water. Salted cucumbers release a lot of liquid. If it is not squeezed out well, the salad becomes watery and the vinegar and seasoning get diluted.

Swap the radish

The recipe marks radish as optional. How well each one fits the dish's main ingredients (cucumber, onion, white pepper, vinegar, parsley):

  1. Radishthe original
  2. Shallotfits about as well
  3. Chivefits about as well
  4. Lettucefits about as well

Fit is the average pairing score against cucumber, onion, white pepper, vinegar, parsley. Candidates are from the same food group and used in at least 100 recipes.
