Why it works: Buttermilk and sugar match in chemistry and in kitchens. They rank in the top 9% of all ingredient pairs, and cooks put them together in 2,973 recipes. Both carry ethanol, which smells alcoholic, ethereal. The science ↓

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare the batter

  1. Preheat your oven to 350°F (175°C).

  2. In a bowl, mix the cornmeal, buttermilk, sugar, melted butter, salt, and baking powder.

  3. Beat the egg yolks and add them to the mixture.

  4. In a separate bowl, beat the egg whites until stiff peaks form.

  5. Gently fold the egg whites into the batter last.

Bake

  1. Pour the batter into a greased baking dish and bake for about 30-40 minutes or until golden brown.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cornmeal
Provides the main structure and the characteristic corn flavor and grainy texture.
Buttermilk
Adds moisture and acidity that works with the baking powder to help the bread rise.
Eggs
Bind the batter, and the whites whipped into foam add lift and a lighter crumb.
Baking powder
Releases gas in the batter so the cornbread rises while it bakes.
Sugar
Adds sweetness and helps the crust brown during baking.
Melted butter
Adds fat for tenderness and richness in the crumb.

The step that matters

Folding in the egg whites. Whipped egg whites hold air that gives lift. Stirring them in vigorously knocks that air out, so fold gently and stop once no white streaks remain.

“What each ingredient does” and “The step that matters” were written by Claude from this recipe’s own method and reviewed in samples by CompKitchen.
