Ingredients

Directions

  1. Boil the eggs hard, then cool and shell them. Grate the yolks and reserve the whites for salads or garnishing.

  2. In a bowl, combine the grated yolks, sugar, lemon peel, and brandy.

  3. Cream the butter and mix it into the egg mixture.

  4. Gradually sift in the flour until the dough is workable, using just over ½ pound.

  5. Add cardamom seeds and a few drops of rosewater to the dough.

  6. Flour a board generously and roll out the dough.

  7. Cut out shapes with a fancy cutter and brush with beaten egg.

  8. Sprinkle pounded almonds and sugar on top.

  9. For lighter cookies, sift the pulverized ammonia with the flour before mixing.
