Ingredients

Directions

The book says “a cool oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Blanch the almonds and pound them in a mortar to a smooth paste.

  2. Add the powdered sugar and beaten egg whites, then mix well with the back of a spoon.

Shape

  1. Dip your hands in water and roll the mixture into balls the size of a hickory nut.

  2. Place the balls on buttered or waxed paper, an inch apart.

  3. Dip your hands in water and gently smooth the surface of the macaroons.

Bake

  1. Bake in a cool oven at 300°F (150°C) for 45 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Almonds
Provide the main flavor and the paste that forms the bulk of the macaroons.
Powdered sugar
Adds sweetness and helps bind the paste into a stable, shapeable mixture.
Egg whites
Provide structure and moisture, setting the macaroons as they bake.

The step that matters

Dip your hands in water before shaping. A little water on the hands keeps the sticky almond mixture from clinging, so the balls and their smooth surfaces form cleanly without tearing or absorbing excess dough.

Swap the almond

How well each one fits the dish's main ingredients (sugar, egg):

  1. Pecansfits about as well
  2. Almondthe original
  3. Chestnutfits about as well
  4. Milletfits less well

Fit is the average pairing score against sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
