Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Small white onions
Form the main body of the pickle, staying crisp-tender once brined and pickled.
Vinegar
Provides the acidity that preserves and sharpens the onions.
Sugar
Balances the sharpness of the vinegar with sweetness.
Cloves
Add warm, aromatic spice to the pickling liquid.

The step that matters

Sealing the jars while the vinegar is hot. Covering the onions to overflowing with hot vinegar and sealing immediately drives air out and keeps the jar headspace free of air, which helps the pickle keep and stay firm.

Swap the onion

How well each one fits the dish's main ingredients (vinegar, clove, horseradish, mustard, dill, sugar):

  1. Beetrootfits better
  2. Shallotfits better
  3. Cucumberfits better
  4. Onionthe original

Fit is the average pairing score against vinegar, clove, horseradish, mustard, dill, sugar. Candidates are from the same food group and used in at least 100 recipes.
