Grated Ham

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the ham

  1. Cut a piece from the thickest part of the boiled ham and trim off the fat.

  2. Grate the lean part and place it in the center of a platter.

  3. Slice the fat into small pieces and arrange them around the edge with tender hearts of lettuce.

  4. To use scraps, chop them finely and mix with some chopped fat.

Bake and serve

  1. Layer bread crumbs and the fat and lean mixture in a baking dish until all is used.

  2. Pour a little water or dressing over the top and bake at 400°F (200°C) until browned.
