Oysters on the Half-shell

Ingredients

Directions

Prepare

  1. Rinse the oysters under cold water to remove any mud.

  2. Open the oysters, loosening them from both sides of the shell and removing any broken shell pieces.

Plate and serve

  1. Place the deep half-shells with the oysters on plates, arranging five or six per plate.

  2. Add a quarter of a lemon to the center of the oysters on each plate.

  3. Serve with additional lemon and thinly sliced, buttered brown bread folded to enclose the butter.

  4. Keep the oysters in the ice-box until just before serving.

What each ingredient does

Oysters
Provide the main briny, sea-flavoured body of the dish, served raw.
Lemons
Add acidity that brightens the oysters' flavour and cuts their richness.
Brown bread
Gives a sturdy, slightly nutty base that contrasts with the soft, cold oysters.
Butter
Adds richness and fat that softens the bread and balances the brine.

The step that matters

Open the oysters carefully. Loosening the oyster from both sides of the shell and removing broken shell fragments keeps the meat intact and prevents grit. Keeping the oysters cold until serving preserves their texture and freshness.

Swap the lemon

How well each one fits the dish's main ingredients (oyster, bread, butter):
