What each ingredient does

Mackerel
Forms the main body of the dish, cooking to a flaky, tender texture.
Onion
Adds a sharp, aromatic flavour that softens and mellows as the fish cooks.
Melted butter
Adds richness and a smooth, fatty mouthfeel to the cooked fish.
Parsley
Adds fresh, herbal aroma and a bright green note to the finished fish.

The step that matters

Quickly brown the mackerel on both sides in the hot fat. Frying in hot fat sears the surface, creating browning and flavour while keeping the flesh moist. If the fat is not hot enough, the fish absorbs more oil and can stick or cook unevenly.

Swap the onion

How well each one fits the dish's main ingredients (pepper, parsley, butter, lemon):

  1. Shallotfits better
  2. Carrotfits better
  3. Spinachfits better
  4. Onionthe original

Fit is the average pairing score against pepper, parsley, butter, lemon. Candidates are from the same food group and used in at least 100 recipes.
