Treat the tripe

  1. Sew the emptied tripe to prevent lime from entering.

  2. Soak in lime-water for 30 minutes before scraping.

  3. Wash off lime to avoid skin irritation.

  4. If using ashes, sprinkle them on the emptied tripe and wash with cold water.

  6. If neither lime nor ashes are available, scald repeatedly with boiling salted water and scrape until clear.

  8. After treatment, soak in salted cold water for 24 hours.

Cook

  1. Wash in fresh water and boil in salted boiling water until tender.

What each ingredient does

Tripe
Is the main food being cleaned and cooked until tender.
Lime-water or wood-ash lye
Alkaline agent that loosens the tripe's outer lining so it can be scraped away.

The step that matters

Washing off the lime. Lime is alkaline and can irritate skin, and leftover lime left in the tripe would affect its taste and safety, so it must be rinsed thoroughly before cooking.
