Chicken Croquettes
Ingredients
Directions
Beat the eggs in a deep bowl until smooth.
Prepare a large platter with cracker dust or fine bread crumbs.
Heat a frying kettle half full of fat over the fire.
Wet your hands with cold water and form the croquette mixture into large cork shapes, handling them lightly.
Roll the croquettes in the crumbs, then dip them in the beaten eggs, and roll them in crumbs again.
Fry the croquettes in the hot fat until golden brown.
Remove them with a skimmer and place on brown paper to drain excess grease.
Serve hot.
