How to Dress a Roasting-pig

Ingredients

Directions

  1. Plunge the pig into cold water for 5 minutes.

  2. Rub the pig all over with powdered resin.

  3. Submerge the pig in scalding water for 1 minute.

  4. Lay the pig on a clean board and scrape off the bristles carefully.

  5. If bristles remain, scald that area again and scrape it off.

  6. Wash the pig thoroughly in warm water, then rinse several times in cold water.

  7. Slit the pig from the throat downward and remove the entrails, saving the heart, liver, lights, and spleen.

  8. Soak the saved parts in cold salted water.

  9. Wash the pig again in cold water and wrap it in a cloth wet with cold water until ready to use.
