Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Venison
Forms the main protein of the dish, cooked by brief high-heat broiling.
Currant jelly
Adds sweetness and a fruity acidity that balances the rich, gamey meat.
Butter
Adds fat and richness, carrying flavour and helping the sauce melt smoothly.

The step that matters

Broil over a very hot fire. A very hot fire browns the surface quickly while the inside stays tender. Cooking too long or at lower heat dries out lean venison and turns it tough.

Swap the currant

How well each one fits the dish's main ingredients (venison, butter, pepper):

  1. Lemonfits better
  2. Red currantfits better
  3. Grapefits about as well
  4. Currantthe original

Fit is the average pairing score against venison, butter, pepper. Candidates are from the same food group and used in at least 100 recipes.
