Roast Prairie Chickens or Grouse

Ingredients

Directions

The book gives no cooking times; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare the birds

  1. Pluck and singe the birds, then wipe them with a wet towel.

  2. Draw the birds and season the inside with salt and pepper.

  3. Place 1 tablespoon of butter inside each bird and sew up the openings.

  4. Truss the birds and place them in a dripping pan.

Roast and serve

  1. Add 1 cup of gravy or broth, or ½ cup each of wine and water to the pan.

  2. Bake or roast for 1 hour for large birds, less for small ones.

  3. When they begin to brown, season with salt and pepper and rub a little butter over them.

  4. Serve with currant jelly or the gravy from the pan, removing excess grease.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Prairie chickens or grouse
Provide the main meat, which cooks through and becomes tender during roasting.
Butter
Adds richness and moisture, and helps the skin brown when rubbed over the birds.
Gravy or broth
Adds liquid to the pan that keeps the birds moist and flavours the drippings.

The step that matters

Roast for the time given, adjusted to bird size. Small birds cook through much faster than large ones, and overcooking dries the lean meat. Checking for browning and doneness as they roast helps prevent this.
