Giblet Stuffing

Ingredients

Directions

Prepare the giblets

  1. Place the giblets in a pot with enough boiling water to cover them.

  2. Add ½ teaspoon salt and ¼ teaspoon pepper, and boil gently until tender. Save the boiling water for gravy.

  3. Chop the giblets finely.

Make the stuffing

  1. In a frying pan, melt 4 ounces of butter over medium heat.

  2. Add the chopped giblets, 2 cups of crumbled stale bread, and seasonings. Stir until the mixture is light brown.

  3. Add ⅓ cup of sherry or madeira and mix well.

  4. Use the stuffing to fill the turkey.

What each ingredient does

Giblets
Provide the main meaty flavor and texture that give the stuffing its character.
Butter
Adds fat and richness, and helps the bread and giblets brown in the pan.
Stale bread
Forms the body of the stuffing and soaks up flavor and liquid without turning mushy.
Sherry or madeira
Adds acidity and aromatic depth to the stuffing.

The step that matters

Stir until the mixture is light brown. Browning the bread and giblets in butter builds savory, roasted flavor through the Maillard reaction. Stirring keeps pieces from scorching while they color evenly.

Swap the sage

How well each one fits the dish's main ingredients (pepper, butter, bread, sherry):
