Roast Chicken with Chestnuts

Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Boil the chicken gently in enough water to cover it until tender.

  2. Prepare the chestnuts by boiling or roasting them; if roasting, make a cross cut on each to prevent bursting.

  3. Remove the shells and skin from the chestnuts and fill the chicken with them.

Brown and serve

  1. Brown the chicken quickly over an open fire or in a 400°F (200°C) oven, basting every five minutes with a mixture of butter, salt, and pepper.

  2. Serve the chicken as soon as it is browned.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chicken
Forms the main dish, and gentle boiling first makes it tender before browning.
Chestnuts
Starchy filling that adds body and a nutty flavour inside the bird.
Butter
Fat that carries flavour and helps the skin brown when basted.

The step that matters

Brown the chicken quickly. High oven or fire heat browns the skin through the Maillard reaction, which builds colour and flavour. Basting keeps the surface from drying. Browning too long can dry the meat.

Swap the chestnut

How well each one fits the dish's main ingredients (chicken, butter, pepper):

  1. Peanutfits better
  2. Beansfits better
  3. Sesamefits better
  4. Chestnutthe original

Fit is the average pairing score against chicken, butter, pepper. Candidates are from the same food group and used in at least 100 recipes.
