Globe Artichokes, Boiled

Ingredients

Directions

  1. Wash the globe artichokes in plenty of cold salted water. Soak them if they are not very fresh.

  2. Boil the artichokes in salted boiling water until the leaves are tender and can be pulled out easily.

  3. Drain the artichokes and trim the tops of the leaves.

  4. Cut the artichokes through the center and remove the choke with a teaspoon.

  5. If the artichokes cool, heat them in boiling water before serving.

  6. Serve with white sauce, Dutch sauce, or Hollandaise sauce, or with butter, salt, and pepper.
