Why it works: Bread and butter are a kitchen classic. They rank in the top 7% of all ingredient pairs, and cooks put them together in 27,232 recipes. Both carry delta-decalactone, which smells sweet, creamy. The science ↓
Fresh Mushrooms Baked
Ingredients
Directions
The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.
Prepare
Clean the mushrooms thoroughly.
Cut slices of bread, about 2 inches square, and lay them in a baking pan.
Spread each slice of bread with butter and season with salt and pepper.
Place one or more mushroom caps on each slice of bread to cover it.
Bake
Bake in a 400°F (200°C) oven for 5 minutes.
Season the mushrooms with salt and pepper, then add a piece of butter the size of a hazelnut on each mushroom.
Return the pan to the oven and bake until the mushrooms are tender.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.

What each ingredient does
- Mushrooms
- Provide the main topping, softening and releasing moisture that flavours the bread.
- Bread
- Forms the crisp base that holds the mushrooms and soaks up the butter.
- Butter
- Adds fat and richness, helping the bread brown and the mushrooms turn tender.
The step that matters
Baking the mushrooms until tender. Mushrooms hold a lot of water. If the oven is too cool or they are crowded, they steam instead of browning, and the bread can turn soggy. Bake until they are soft and their liquid has evaporated.
