Why it works: Meat and bread are a kitchen classic. They rank in the top 14% of all ingredient pairs, and cooks put them together in 2,924 recipes. Both carry 2,4-decadienal, which smells seaweed. The science ↓
Stuffed Morels
Ingredients
Directions
The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.
Prepare
Clean the morels and cut them at the bottom to create space for stuffing.
Prepare a forcemeat using cold chopped meat and bread, seasoned to taste, or use partly cooked sausage meat.
Stuff and bake
Stuff the morels with the forcemeat and close them with a sliver of wood or a small metal skewer.
Place the stuffed morels on small slices of bread.
Bake in a moderate oven at 350°F (175°C) for about 10 minutes or until tender.
Serve
Serve the stuffed morels on the toast while very hot.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.

What each ingredient does
- Morels
- Hollow caps hold the forcemeat, and their tender flesh becomes the main flavour of the dish.
- Cold chopped meat
- Provides the savoury body and richness of the forcemeat filling.
- Bread
- Binds the forcemeat and absorbs juices, giving the filling a softer texture.
- Partly cooked sausage meat
- Offers a ready-seasoned, fatty filling that stays moist during the short bake.
The step that matters
Stuff and bake while the forcemeat is still hot. Baking only about 10 minutes is enough to tenderise the morels, so the filling must be set and the mushrooms cooked through without drying out. Leaving the stuffed morels to sit for long before baking can let juices seep out and soften the bread.
